Carcass quality
Marbling is a key criterion when it comes to evaluating fed cattle in North America—AAA and Prime being the most highly sought-after categories. The Quebec market’s historical preference for leaner meat has placed limits on the production of marbled AAA and Prime cattle.
However, the demand for AAA and Prime meats is now rising as a result of changing consumer habits.
To support the industry through this transition, feeder calf and fed cattle producers need guidance so that they can profitably increase production of AAA and Prime marbled beef while at the same time optimizing Y1, Y2, and Y3 carcass yield.
In April 2025, the PBQ organized an information session for feeder calf and fed cattle producers seeking to improve carcass quality in Quebec-raised cattle. Producers had the chance to attend presentations on genetics, feed, health, and implants.
